Is there a way to change my offensive playcalling run/pass ratio without firing my offensive coordinator?

you cant the whole thing with a roster only league is the CPU does the playcalling run/pass ratio

btw if you were to fire someone it would be Head Coach because whatever your coach runs for offense/defense basically is ran.

so basically you will have a west coast offense for offense and 3-4 heavy zone for defense

You can change head coaches, but doing so only affects about 10 percent of your playbook. Your coordinators and other assistants don't affect the playbook at all.

The "strategy" portion of Rosters Only leagues is in player acquisition, contracts, depth chart, and overrides.

If you watch the games, the decisions your coach makes will have you pulling your hair out. The AI coaching is pretty awful, a big reason why so many games have final scores of say, 9-6. Your only comfort is that your opponent's coaching is just as bad as yours.

Your No. 1 priority is to make sure you are using the correct player weights. Send me a PM and I can give you some good resources for that.
